WHAT THIS ACTUALLY IS

Marjoram Essential Oil, the Spanish sort, steam distilled from the leaves and flowering tops of Thymus mastichina from Spain, a wild Mediterranean herb that is, botanically, a thyme rather than true marjoram. Warm and herbaceous with a fresh, green, faintly camphorous lift from its natural cineole, it smells exactly like a proper cooking herb going into a warm pot: savoury, comforting and unmistakably of the kitchen. The Greeks crowned newlyweds with it, for happiness. It has stayed useful ever since.

This Spanish marjoram (Thymus mastichina) is high in cineole; use sparingly and in a well-ventilated space, and avoid around young children, during pregnancy, and anyone with asthma or breathing sensitivities. Do not ingest; do not add to food or drink; do not use in baths; do not apply to skin, even diluted or on broken skin; and do not use for massage or personal care. Avoid eyes and sensitive areas. Keep away from children, pets, heat, sparks and open flames. Store upright and tightly closed. Never leave heated equipment unattended. He has watched the Surfacefolk have their comfort food confiscated and sold back as nineteen-pound nostalgia, and, worse, watched the person at the stove feed everyone they love and then eat standing up, forgetting entirely that the soup-hour is for the cook too.
