Frett keeps the herb pots at the low end of the Sanctum, and Frett has a history. For centuries he was garnish: set on the edge of things for the look of them, admired for a second, scraped off before the eating, never once asked his opinion.
Then one evening he climbed down off the rim of the plate, walked the length of the table, and sat in the centre, where the real business happens.
“Decorative and surplus at once,” he says, of the old job. “Never again.” He has strong views now, and gives them, and is consulted, which he considers overdue.
